You're either a pro chef who's been cooking his whole life, a fat neck beard who thinks scrambling an egg counts as "cook work", or an actual mong that's never touched a difficult dish in their lives.
Cooking is difficult because it's a multifaceted endeavor that requires knowledge on a ton of things. For example, I didn't know how strong a flavor baking soda had when cooked because I never fucked up with baking soda before. I poorly mixed and over compensated the amount added to a cookie pie once and realized that mixing dry ingredients ensures an even distribution of baking soda, and greatly reduced the disgusting flavor and mouth feel.
Another example is butternut squash cordon bleu. I didn't realize that minimal mixing means maximum grit, and ended up with a nasty mouth feel and occasional chunk of unincorporated squash.
Seriously, try and make something beyond tier 2 on net shaqs levels of cooking. You will learn something.

I'm rather accomplished. I would think that anyone who considers themselves a chef would first and foremost not just admit but extol the idea that cooking is in fact very easy.

Cooking itself is the easiest part of it. A skilled chef doesn't even cook professionally. It is much more important to focus your attention on creating dishes that can be efficiently produced with the best quality ingredients, and maintaining high standards with less than ideal profit margins.

You don't think being a chef is hard? Try placing food orders for a week at a fine dining restaurant. If you waste more than $20 you're fucking fired.

Being a chef 40 years ago was seen on the same level as a rubbish collector or sewer cleaner. It was bitch work, with awful hours and stress. The pay was dogshit, and most of them (and still are) massive addicts and alcoholics.

The only saving grace was moving to a very high end restaurant and hopefully cooking for some rich cunts.

That's why you had absolute psychos like Macro Pierre White thrive, they were mental and just went for it. These days, every dick with tattoos and piercings wants to be able to him, and all of them fail miserably.

I don't recognize anything you just said. cooking is easy. i simply learned from my grandparents how to make this and that curry, when to fry spices vs when to add them at the end, cook by smell and make do with the ingredients! cooking isnt hard. What is hard is food-centric autistic compulsions, which is what i suspect drives many european and east asian chefs to create such horribly elaborate "meals".
