yep. they're alright, but use a fuckload of vinegar for a reasonable amount. i made some with white vinegar, some with balsamic, and then another batch with rice vinegar. balsamic was crazy. would love to try malt sometime. bet that'd be pretty based.

i've never thought of soft boiling them. and they do actually keep surprisingly well in the fridge. if you use salt you're practically aging.preserving. those are survival foods bro.
if they start going bad you can just dehydrate them and vacuum seal it up for the next decade

I have it's easy. made both Alton Brown recipes and the made some with canned beets.
Tasty but not earth shattering.
Pickled kielbasa is better and just as easy to make.

Oh, it's a thing that is good to pair with beer. They're pretty keto.

They're easy to make at home, esp if you do like beets, but there are recipes without the red beet color and flavoring too.I've made them but I don't properly can them for long term storage. I just fill up a jar of about 6 hard boiled eggs with a preparation of vinegar and herbs, like taragon or dill. Cool in fridge overnight. Enjoy over the next 2-3 days.

You can just buy that big john's jar at Wal-Mart if you aren't sure you will like them. They have them next to the Pickled sausages kind of near the mixed nuts and sodas typically on the endcap. You'll find Walmart's versiono of kool-lickles on the pickle aisle, too. Those are surprisingly good, but my favorite is the sausages.
