I have a stainless steel electric kettle (no boiling water is in contact with plastic), the water I get is filtered through reverse-osmosis and remineralized.

Heat water in a pot until, depending on the type of tea you're steeping, it's warm or hot enough. If it comes to a boil, pour it out and restart.

Boiling is fine for some teas, like rooibos, also for teas requiring water near boiling I don't see why you'd dump the water rather than just turn off the heat and let it sit for a moment to drop to the proper temperature.
