Why does fried rice (a very old chinese dish) use things like electric rice cookers and MSG, and it's acceptable to cook it with those

basically a small microcontroller that can monitor inputs and adjust temp and cooktime based on those inputs, in a rice cookers case it's moisture, temp, and pressure. At any given time it'll be aware of all of those things, and based on your cooking selection (white rice, brown rice, porridge, etc) will adjust the rice to come out exactly as it should.

It's much better than "dumb" rice cookers that just get hot enough to boil and when they get too hot they turn off (getting too hot means there is no more water and so it's done cooking)

Moisture goes up to 100% humidity every time; it's a covered boiling pot; until you run out of water.
Air pressure goes up to a set amount and excess is vented every time unless you put in so much that the top pops off, until you run out of water.
Temperature of boiling water is 100C every time, and only lowers once you run out of water.

Crustiness is caused by pools of water left behind, frying some exposed rice while water boils in the pools. But that only happens if you've scratched the shit out of your container. Or it's not calibrated properly; but that problem is only magnified when introducing more sensors.
