Good afternoon Sultans of Sloppa, Big Papa Sloppa here! I know we all laugh at Bill Foster for "thinking about thos Beans," but frankly how could anyone not constantly think about beans? They're delicious and are a key ingredient in many sloppas. Bill Foster's real mistake was thinking about Bush's Beans. Bush's Beans aren't bad, they're just pricey. For the cost of a can of Bush's Beans, you can buy a whole pound of dry beans and get more bean for your buck. Dry beans have the benefit of tasting better than canned beans when cooked too.

Anyhow, I present a sloppa in progress. The first ingredient: one and a half pounds of soaked black beans.

Tex-Mex inspired black bean sloppa.

I forgot to take a picture of all the chopped up vegetables, I had some vegetables I needed to use up and ended up dicing up:
3 onions
1 serrano pepper
1 poblano pepper
1.5 bell peppers
4 stalks of celery
A carrot that was sitting around

I cooked up chorizo before sauteing the vegetables. Then I sauteed the vegetables in chorizo grease. Yum!

You should consider a mostly meat and dairy heavy sloppy meal. For a healthy change. Like bacon, sausage and corned beef with a little bit of potato and covered in hollandaise sauce.

They just should be eaten sparingly. Nothing against beans, they have their place but to be healthy you should be eating a primarily meat and dairy diet. Beans, a little grain and the occasional piece of fruit or vegetable should be a occasional treat. It is a bit more expensive, but peoples health is worth it.

Besides, there are plenty sloppy ways to make meat, cheese/dairy heavy dishes. Just consider it for the future...

Do you soak your beans with salt? I never tried this before, but ATK recommends brining the beans for 8-24 hours, and then not adding salt to the cooking liquid.

While I'm still eating my way through this sloppa, I'm already planning my next. I think I'm going to make some peas and greens with black-eyed peas.

There are a couple of Indian recipes I want to try, but I need to get to the grocery store and buy more ginger first.
