Hijacking the thread to ask a quick couple of questions about kimchi, which I'm attempting to make for the first time (vegetarian version) today.

I couldn't be arsed to find an Asian supermarket to get the perfect ingredients, so the possible ingredients I've got for the kimchi paste are as follows: soy sauce, sriracha, chilli flakes, garlic, ginger, balsamic vinegar, Worcestershire sauce, salt, pepper, caster sugar. Some combination of that should be ok to make something resembling kimchi paste, right?

Second question - is the process of making kimchi essentially just smothering the base vegetable(s) in the paste, maybe adding a small amount of water, and then leaving in airtight glass jars for a few days to ferment? I'm thinking of trying five different opions:

1) Red cabbage + spring onion
2) Red cabbage + cucumber + spring onion
3) Red cabbage + radish + spring onion
4) Carrot + radish + spring onion
5) Aubergine (eggplant) + spring onion

How do those sound?
