I can't put sriracha on anything besides asian foods.
And I can't put frank's red hot (or tabasco) on anything besides American food.
For Latin foods, Valentina (Black Label) is the best cheap sauce you can get (Tapatio is crap, Yellow label Valentina is also crap)

My favorite cheap hot sauce for Latin foods would be El Yucatan Habanero sauces from Mexico. They are thick like sriracha but much hotter. Not vinegary like Tapatio or Valentina. But they are still $2 for a little tiny bottle despite coming from Mexico.

Superhot pepper sauces (only available online usually) are amazing but they are too overpriced. It isn't worth it for me to buy a tiny $10 bottle of ghost pepper sauce. It's better to buy carolina reaper powder or capsaicin extract and mix it into one of the cheaper hot sauces.

Black chile el yucateco, trader joe's chile sauce. The yucateco is a bit spcier but both are fairly mild, extremely flavorful sauces especially good mixed into bbq sauce. Not really hot sauce, but melinda's habanero honey mustard is perfect on almost anything too.

Mostly I just make my own though cause I grew a habanero plant and it turned into a small tree and was insanely productive. Still has fucking peppers on it right now.
I don't do anything fancy though, just throw a bunch of habaneros, maybe some garlic, salt, and vinegar in a blender and puree it. Sometimes I'll throw in pineapple and mango for a nice fruity version. Also occasionally some carolina reapers for some extra heat if I have any, but I got the plant late in the season and it hasn't been too productive.

Dave's Gourmet Scorpion Pepper is a good one that doesn't use any extracts, i can put that one directly on food and it tastes great- definitely recommend. Otherwise, it won't matter if you are just adding to a bigger recipe, go crazy with somelike like blair's mega death sauce or whatever. I find any sauce that uses extracts to have too much of a chemical taste to use it as a direct topping or base ingredient.
