I didn't look at the plating. 6/10. The hollandaise should have been drizzled on the asparagus and ditch the green onions. Garnish with a knob of garlic herb butter or slice at a 45 degree angle against the grain with a sharp knife, sprinkle of large flake finishing salt, fresh cracked pepper, and some finely chopped parsley. Mushrooms would have been better sauteed in a red wine sauce and served in a small dish next to the plate. You'll get 'em next time sport.

Also if you aren't already, make sure to sear the fat cap for a minute or so on each steak before flipping, and ditch the stupid electric grill. A smooth cast iron skillet will produce a better sear and allow you to baste the steaks in their own juices while they rest.

You don't need to do this if you salt the steaks an hour before as they rest to room temperature. The salt will soak all the juices back in like a sponge and it will sear beautifully. I have tried every which way to make steaks and no question salting an hour before produces a better crust and a better tasting steak.

Maybe I should be resting my steaks longer then. Is that the secret to a more concentrated beef flavor and tender cut? I've been perfecting my steak technique for years and I still can't get it to mind blowing levels even with prime meat, perfect seasoning and sear. Theres just something missing. I'm not sure if it's because I don't finish it with butter, or if I need to add bullion or msg or some other secret ingredient. Obviously dry aging would be the next step to explosive beef flavor, but I've had great steaks that weren't dry aged. Mine are 7-8/10 but I want 10/10 licking your plate every time.
