Animals totally do count, and minimising their suffering is a moral imperative, but there is a difference between the ideal state of being and the practical possibility you can enact. It's not about being clairvoyant. It was using common sense. The land had been managed by humans, but it just didn't look like it. The natives were getting tons of their food from the bison who grazed on the plains for millenia. The colonial settlers were and still are ignorant for trying to totally revamp a system that was already effective. It's no different than vegans today trying to turn the whole world into a crop farm. Modern crop farming is still incredibly destructive, it's only a matter of time before it causes another environmental disaster much worse than the dust bowl.

The dust bowl would have never happened if they had cattle on it. The grass would have continued to hold the topsoil together during the wind and drought. They might have lost a few cattle due to thirst but that would have been leaps and bounds better than the alternative that did actually happen.

And of course I'm gonna run my freezer! What the hell? Do you like, unplug your fridge? Don't get me wrong, in the future I plan to use less energy by having a root cellar and having some meat that is dried, canned, and salt cured. But in the meantime I live in the year 2021 and I'm going to take advantage of the technology we have. Jeez.
