Chef john used to be the goat, but Kenji is now better tho. John gives you recipes, Kenji does too but he explains the science behind it well enough that you can understand how it works and apply those concepts elsewhere to become a more well rounded cook. I'm a professional pastry chef so my opinions are next to useless, but he seems easy and to the point, I would recommend him to amateurs alongside French Cooking Academy, If you want to learn by YT then these two are a nice starting point since they show useful and various things while not promoting bad habits.

Impressive how the more someone knows about what he is talking the less "hacks" and science mumbo jumbo there is. Sure, science is important in cooking, specially in pastries, where measurements have to be formal and you can't adjust much on the go, but most science talk from YouTubers is just mental masturbation to make you think you are getting more value.
