do everything within a bowl of water. Squeeze the head - they pop right off. Use kitchen shears to cut down the back, and then use a finger to extract the intestines/vein. Wah lah your done.
Fun fact, you can get an extra tidbit of meat from the tail if you squeeze at the locus of the three rear fins - that is, right where the meaty tail becomes keratin.
