These spiral bound community cookbooks are really interesting. They were often produced as fundraising mechanisms by local churches, non-profits and special interest groups. Basically crowd sourced recipes with zero editing and certainly no testing, often the recipe submitter was the target audience for purchase.

The vast majority of these cookbooks are garbage and contain bizarre, industrial and poverty food recipes based on mayo and cream of mushroom soup as OP has illustrated but once in awhile there is some local and regional gold, like someone's grandma, nonna or oma's family recipe.

OP here, my mom just gave me another collaborative cookbook. This one was put together in 2000 by an organization my grandma was a member of. Told me her mother used a can of Campbell's soup and added 5 cans of water to feed 6 people. Said her mother and grandmother got a weekly food allowance, no credit cards, and had to make it last. Then ahe started telling me about her mother telling her how sandwiches were wrapped in waxed paper, there were no plastic bags, bread got stale by lunchtime.

Great posts OP. In the spirit of the holidays, I thought I'd share a nice meatloaf recipe from one of the community cookbooks in my collection. I thought it was pretty interesting, the recipe calls for a specific cut of ground beef. You never see people today asking for specific cuts to be ground meat, unless they go to a specialty butcher.

Here's some observations I've noticed. The older the book, the better the recipes especially savory dishes since most of them are written by people who are still cooking from their recent immigrant traditions but subbing in the closest ingredients possible given the time and their location. Recipes from southern transplants or families with southern roots are always great. No matter the time period, people usually have great desserts which is interesting since savory dishes took a big hit in quality between the 50s-80s but people still put in the effort to make a decent dessert.

The recipe is actually a riff on chinese chicken salad. The fancier ones will add mandarin orange slices, plum sauce/ginger/soy sauce in the dressing, and use a higher quality crunchy noodle like wanton instead of cheaper top ramen.

Very tasty if done correctly, and a nice change of pace from caesar salad. A lot of community cookbooks have a variation of the recipe, it's very popular.

The real answer is that the frozen egg noodles and the dried turn into very different end products when cooked, in texture as well as thickness. Around here when people make homemade pasta for chicken and noodles/dumplings they're more analogous to thin strip of dough, similar to the dough used to make a pie crust. These are then boiled in the broth and serve to thicken the soup. They're wider, more delicate, chewier, have a bigger bite to them, and feel very different, texturally. The frozen noodles in your picture are attempting to mimic the homemade ones I just described.
