Not OP but a former cookfag and yes you need a special sponge that feels like you're scrubbing it with a brick, and then you have to wipe up the excess black liquid with a cloth. Gets all over you if you're not careful.

You have to clean it after every use regardless of whether it's at home or in a restaurant because letting burnt food/butter stick to it overnight or however long will make it impossible to get off. IIRC you douse it in lemon juice while it's still hot, scrub it with the brick and then clean up with a cloth or two.

I have one of these and it does everything that huge thing does and you can clean it in the sink.

It also has grill bars on the reverse side for grilling if you had to.

Its heavy made of cast iron and the handles get hot so you have to use oven pads. But its easy to clean really.

I use it for all kinds of stuff. Like making a toasted ruben sandwich for example. The trap isnt gonna collect alot of oil making something like that.

I plan on making crab cakes tomorrow with it.

The only time I had the trap fill up is when I cooked like 2 lbs of pork belly right on it for korean BBQ.

Ive only used it with gas range. I dont think your supposed to use it with a glass flat top range tho.

I remember now that it has to be cleaned with a chemical solution while still hot (ofc turned off, but don't et it get cold), the lemon juice is for polishing after you've gotten rid of the black gunk that comes from scrubbing. Just don't be an idiot and thoroughly research how to use/clean the thing before attempting to cook with it.

These cast iron ones cost like 30-40 bucks. Sometimes when I cant grill outside on my propane grill I will use this for a steak.

Or its nice for grilling bread. Just put some oil on the bread and toast it. I do that when I make tomato bruschetta.

The cast iron griddle is great for making ruben sandwich because you can heat up the meat and the sauerkraut while toasting bread too. But it can burn the rye if you have the heat too high so you have to toast the bread on low with lots of butter.

I make my own white castle sliders. They are small burgers that are steamed on a bed of onions on a flat top griddle.

So I roll out burger and shape them like sqaure white castle sliders with the holes then I steam them on a bed of onions on the griddle.

You can buy tiny buns to eat them with and eat a bunch of sliders.

I got one of those on sale a while ago for the express purpose of making stuff like meatballs in the oven. I wanted the raised edges because I was tired of grease dripping into my oven, cover it in a layer of foil and cleanup is nothing. That was a damn solid purchase for $15.
