haven't made any in a while but I'll have some free time and might do a fruit liqueur of some sort. usually it's the old standby - dried apricots, vodka and sugar and let it sit for a few months...

i usually just buy a cheap 2L bottle of juice and throw in sugar and yeast, topping it off with a balloon. wah lah

Hi fren. I’m making limoncello right now based off this recipe: https://www.cookingitalianwithjoe.com/authentic-limoncello

I had the peels soaking for about 3 weeks and I filtered and added the honey a few days ago - looking to get it in the freezer in a few days so it’s ready for Christmas.

I tried it yesterday and it’s super fucking strong, will freezing it help the taste? I like everclear but my family coming over is not al/ck/

Not a good recipe. The reason most people will add a sugar syrup instead of sugar to limoncelloade with everclear is to bring the alcohol to under the 45% mark. I cannot fathom a world where limoncello would be made with honey. Italian Joe is about as authentic as a Domino's

100 proof vodka works better than Everclear.

fermentation cultures can digest refined sugar much more easily than any other carbohydrate source, honey is fine but can be less consistent especially if it has been p*sturized (god forbid)

Yeah. It's balls easy in the winter to make a few gallons of apple wine and then freeze it in water jugs to distill the alcohol out.

Filet mignon is better than ground beef but I don't want that as a burger patty. It's not about which is better, it's about which is more appropriate for the item you're making.

Hey, OP, be really careful with liqueur made with citrus peels. In fact, I’d say don’t do it. A few years ago, I made orange liqueur with local citrus fruit peels. Unfortunately, several guests felt uneasy and felt hallucinogenic symptoms. Be careful and do your research.

Been using a sous vide to flavor vodka for awhile. Pretty much any fruit/vegetable /aromatic/ in a quart jar for 3 hours @180f. Typically use 1 cup fresh ingredients vs half a cup of aromatics. Give it a shake every hour or so while it's cooking.

My favorite is black peppercorns in vodka for bloody marys. I love black pepper and it's makes the best bloody mary.
