because my christmas gathering is very small this year, I'm making a prime rib roast.
Is it better to "reverse sear" (go from low heat and finish at high heat) or to put it at high to sear the exterior and then reduce the heat to cook internally?

I have success with the start high then reduce method, but I usually cook smaller cuts. Gonna be cooking one for 10 adults this Christmas, still not sure how big a piece a meat I should order.

Hey Bro, I just made one and I seared it on high heat to get a nice crust 3-4 mins from both sides. I then put it in aluminium foil and put it in the oven at 90 °C for a little over 2 hours. I do the same for my duck breasts. It was somewhere around 800 gram, time in the oven obviously gets longer when the cut is heavier.

Thing is, you don't have a heat source that is going to sear this thing properly on the outside, very few people do at home. I'd just go slow the entire time and use pic related on it.

It seems bizarre as fuck, but I've become quite happy with the results of vacuum packing my meat then giving it a 1200F blow dry.
