Beginner here, are e-chefs on youtube good starting point for beginners cooks? I have a feeling they are all mostly mediocore homecooks who know nice camera tricks and how to follow the recipe's they steal. Even then, are they a good starting point or are more traditional cooking shows better?

Food wishes legit taught me how to cook. You have to shift through the extra stuff and just focus on the stuff you'd actually be able to eat regularly. Just cook. Video recipes aren't that useful unless you need to reference specific techniques. They're more for entertainment than instruction.

That said, Food Tubers do tend to have recipes that are more practical for at-home cooks and the video can be a decent guide if there is something you don't know. I've used Ragusea's pizza dough recipe and Weismann's tortilla recipe and they've been the best of any recipe I've used since they're made with home chefs in mind and are tested to make an attractive, tasty product.

I prefer traditional cooking shows. Pepin has a ton of stuff on the KQED channel on YouTube that's more of a traditional cooking show, but he shows more than just recipes and extends that to discussion of technique and planning a full meal, whereas most YouTubers just bounce from recipe to recipe. If you can "find" it, watch some Good Eats too, Alton is accessible and talks you through some of the cooking science.

If you like books, something like the Better Homes and Gardens cookbook has sections on equipment, technique, then recipes sorted by drinks, appetizers, entrees, etc. Call me crazy, but I'd suggest looking for like the 11th or 12th edition. The more recent versions seem to have sacrificed content for bigger, brighter pictures.

Alex French guy is good in the sense that he actually spends months on the same simple dishes and shows his improvement in technique and intuition.

Pepin is a really good start.
He started his apprenticeship at like age 13; he's 84 now. He simply has more experience cooking and teaching than most youtube cooks, and that goes back to the 1960s. He's been making cooking videos and writing cookbooks since before youtube existed.

Watch the Essential Techniques video - it is worth the three and a half hours. Then go on to Fast Food My Way/More Fast Food My Way. Those go through a whole multi course meal in around 45 minutes (they use some production tricks, like the infamous two ovens no waiting, sometimes, and it's understood and accepted that his knife skills are orders of magnitude faster than yours).

Kenji, Josh, and Chef John are the best and actually know how to cook. They are very detailed in their methods and you can actually cook what they are making if you follow along.

I may be biased, but all their recipes are also very similar to the way myself and my friends who work in high-end kitchens make things.

All the other youtube chefs are pure entertainment. They may have a nugget of truth here and there, but they do not consistently make good food, and they often leave critical information out.

I would also watch Raymond Blanc’s “How to cook well” on youtube or wherever you can find it. Jacques Pepin is also classic as well.

The hardest part about cooking as a beginner is just knowing where to start and what to cook. You don't know what your options are because you could make literally anything these days, so what do you do to get yourself to try new things?

There was a thread about ratatouille here where the OP made the movie's version in a skillet. It's not real ratatouille, but most people outside of France don't know what to look for when they google it. They just google it and pick the first result that looks like the movie.

But they learn shit from it. And in the process they pick up that the original dish isn't like in the movie, so they try it again later and use a more authentic recipe, and they learn more.

That's how you learn to cook.

Honestly of the people in that pic I'd really only recommend Food Wishes and Shaquille. The rest are okay but either:

I like to call Bon Appetit, "Cooking For Catladies" due to the weird amount of spinsters I know who obsess over it and kinda low-key fantasize about working in the test kitchen. The bartender at the restaurant I work at is one of such and low-key was basically cosplaying as Claire when we had our staff thanksgiving party and basically everyone cooked something before the dinner.

As a whole I'd recommend finding something you like from someone like Food Wishes, Shaquille or even Not Another Cooking Show. Focus on the technique and not the ingredients or expensive gadgets anyone uses. Then make whatever it is. If it comes out great, then think about how you did what you did and apply it to something else. If it didn't come out the way you wanted, try again while thinking about what went wrong. If you're not fucking up, you're not learning.

It's why I mostly don't like his stuff, because it's usually repackaging a method from another recipe or even another recipe video as his own.
