agreed, fresh is best imho, but it's all a matter of opinion. i like crab imperial and crab cakes (used to live in MD) and all that, but when it comes down to it I'd prefer freshly boiled or steamed crabs (blue, dungeness, stone, alaskan, etc.) with drawn butter and some old bay/paprika. I like a whole lobster the same way really sans old bay. I never really cared for the dijon/dijonnaise with crab approach though

I still buy lump crab which is still a jump over other things but it's still not as good as frozen crab, which isn't as good as fresh caught. It's not always like night and day. canned lump crab can be perfectly fine. I'll probably do seafood for Christmas this year. But you're right, there are plenty of times when canned or frozen is the only legitimate option. Shrimp drives me crazy. I've had some horrific buying experiences from grocery stores where they've just tasted off, even soaking/thawing them in water and cooking with lemon, etc. Scallops I get lucky though.
