As of 2009 just over 56% of US houses have a garbage disposal.
Here are some reasons why they are less popular outside the US:
It's a US invention that wasn't sold outside the USA until 1968.
Lots of local authorities (both in and outside the USA) have laws against putting food waste down the drain.
The USA (until recently) was the only country in which manufacturers of this product have actively lobbied to alter laws making it legal to install in a home, and in a few cases (the inventor's home town, for example) a legal requirement to own one.
Initially, they were considerably more expensive than in the US because they needed to be shipped across the Atlantic.

TL;DR
It's an American invention pushed in America. Countries that are more crowded are less willing to take the chance on introducing extra volume to sewage systems that in some cases are already over 80 years old.

We don't put food waste in the sink. Irrespective of quality of plumbing or anything our water treatment isn't setup to deal with it effectively, suspended solids will always drop out to some extent and fats are never welcome. They absolutely do not, and the fine paste flows nicely and eats away at solidified oil in pipes; they literally help unblock pipes.

The very first bit of machinery in a waster water plant is a grinder grate to chop up soft material like bones, while forcing metals out into a collection basket.
The filters are the very last things before discharge and are only fed skimmed water that's free of solid matter.

The digestors make methane from food and poop. It's about as damaging to the environment as a wet land is.
The ozone layer is not harmed by methane.

You seem to know basically nothing about the process.

The one negative that does pop up is that in some cheaper systems the waste isn't completely consumed by the digestors and those systems release a lot of ultra high nutrient waste water that causes blooms of allege when that waste hits lakes or oceans. In turn those blooms consume most of the dissolved oxygen in the water and can kill other aquatic life. The solution to this is to just cut in more natural water to dilute the concentration. Overall so long as you don't cause a bloom all you do is create a massive source of food for critters in the ocean/lakes. Which people can then eat again and poop out or throw in the garburator.

There are a lot of other factors as well (beyond the European shitposters saying that "they're just bad/stupid/expensive/wasteful/lazy" without having tried them):

1. It was invented in the U.S., so it makes sense it'd see early adoption here before other countries
2. There are a lot of legal obstacles. An area might ban them because wastewater treatment can't handle a bunch of food waste without expensive overhauls. Extensive lobbying is how the U.S. got it legalized. Nice to see that work out for once.

It does exist to some degree in other countries though, including Australia, it's just much more rare.

I put my waste in a plastic bag which I take to the biowaste bin which is locked and closed space so no forest animals or unwanted peoplle can go there. Then the biowaste is taken to the biogas plant once a week I think.

Bong who moved to the states. When I first came here I didnt like it much because they tend to smell (no U-bend before it obviously) so I ended up shoving a ton of Fairy or bleach down it after every use because it was so nasty, especially after something like chicken leftovers or onions. No American could smell it though, my wife and in-laws thought I was nuts, and while my wife would admit if she stuck her head in the sink she could smell it a little, she kinda shrugged and said 'well its a drain'. Eventually as we got dogs again like we had in EU it kinda fell out of use. Scraps went to the pups, raw waste like peelings and bones I just dump in trash (pickup is twice a week so not long enough to rot anyway).

Interestingly the mother-in-law was horrified when she discovered the dogs were eating human food daily, so was a couple of family friends, and our vet even got in on the act and gave me half a lecture about how it was sooooo bad for the dogs health before I walked away. So perhaps the disposal is an alternative to Europeans feeding the animals all the scraps?
