been practicing making schnitzel type fried meats

Hope everyone had a nice Thanksgiving. I barely managed to fit this turkey into my toaster oven. It took like 4 hours before the breasts hit 155. Started on the stove in the pan so the thighs were very tender once done. Had foil loosely on top pretty much the whole time except for the last 10 minutes. The coils of the oven singed the very top of it when I took it out. Also, not sure if injected, but there was SO much juice that came from this I had to empty the tray halfway through cooking. Made some excellent stock and gravy from the the neck and giblets and juices. I will probably freeze the leftover fat so I can randomly make turkey gravy over the next few months.

didn't go to any family this year for obvious reasons so i did a whole thanksgiving meal myself for just me and the gf. i have been working on my pie game most thanksgivings and my mom does the turkey with me helping with gravy etc.

this year did it all myself, 22lb bird, 2 pies, salad, asparagus, potatoes, gravy. only the stuffing and rolls were bought.

froze 4lbs of turkey and 3/4lb of gravy for later pot pie making.

It really does take practise I think. I've watched numerous videos so I understand the mechanics but still I just start getting frustrated. My grandmother oth, had made so many pies in her life that they were effortlessly perfect.

What crust recipe do you use? I've been using Martha Stewart's and it comes out nice and flaky.
