This, you learn basic techniques and they apply to everything.

Sear
Deglaze
Brine
Dry brine
Roux
Sweat
Sautee
Bake
Broil
Smoke (and crutch)
Steam
Baste
Braise

You can make pretty much any actual food with these techniques. I don't eat deserts because they taste bad so I don't know much about creaming your sugar and shit.

There's a few baking recipes I keep in my bookmarks on my phone. Besides that, I don't really use recipes. I already have a good enough understanding of various techniques and how different flavors interact with each other that I don't need to. Although if I'm making a new dish, I will skim through a bunch of different recipes to get an understanding of the flavor profile and just make it how I want.

Not either of those anons but I think you're being a little hard headed here. How many chefs do you know that have to pull out a recipe card to make a dish? Not very many, I'd assume. They know exactly what they want to make and call on there knowledge of technique and flavor to make the dish. Now don't get me wrong, I'm not saying to never look at recipes but that you shouldn't be looking at a recipe and just mindlessly following what it says. You should be looking at multiple different recipes to get a general idea of how the dish is prepared and be able to use your own understanding of flavor and technique to make it

Okay look at it this way, genres of music all have similar characteristics, but a bunch of sub genres. All dishes are sub genres of some mother dish. If you know how to make the mother dish it's simple little tweaks to create the slightly different dish you're going for.

we all have techniques and combinations in our heads but if i want to make a biryani or a pastry or a mole or a game bird i'm going to read some books or some websites because i'm not so familiar with these things and i want to take notes from people who are
likewise if i'm going to play holst with an ensable i'll refer to sheet music and not just try to wing it because i remember some of the melodies

You're arguing that not needing to mindlessly follow a recipe, is somehow "anti-intellectual". But most professional chefs and decent cooks aren't just following recipes like you are. Just keep following recipes and enjoy your culinary stagnation. Whore

She doesn't have the motivation anymore, but years ago my mom would keep two or three notebooks where she pasted cut recipes from magazines, promo flyers and more, with notes on the side about how it turned when she did them. She had one for general dishes and other for desserts.
With that said, just put them on your PC. Keep folders with the documents classified how you see appropriate (per country, per entry in a course, etc), and keep a spreadsheet with the folders and names for easy reference.
