Youre supposed to cook the meat, add the almost fully cooked pasta to the meat pan, THEN add your egg mixture when the meat pan's heat is turned off, and mix the pan vigorously until the egg mixture is a sauce.

What you're doing appears to be cooking the meat, adding the egg mixture to it, leaving the heat on and making scrambled eggs instead of a sauce.

Easiest way I found was to whisk the eggs and cheese in a bowl over your boiling pasta. Add your pasta a little before al dente, ladle in some pasta water to keep cooking and control consistency, and add your fried up meat and drippings at the end.

used to think that ingredients like that were memes but a few months ago I managedto get both of them and holy fuck do they make a difference
