What is the point in squeezing lemons to certain food? You can't taste it, so what does it do?

>> No.15131205

It adds some zest

Aside from this >>15131207
even if you can't taste it distinctly, it can add to the flavor and texture of things like beef stew. Lemon is an acid that splits fat. Lemon is usually added in fruit conserves, both as a balancer to sweetness and as a preservative, it's a natural preservative, because it's so high in vitamin C.

acid doesn't do shit to fat, that's why we have the bladder do it, and not the stomach.

Lemon juice adds freshness and lightness to otherwise fatty dishes. That's why you add it.

Acid (citrus juice, vinegar) and salt ENHANCE food I.e. season it. Lemon juice seasons your food. You’re not supposed to taste lemon juice - that would mean you over seasoned, just the same as you shouldn’t taste salt.

Tl;dr: tranny shoots lemon juice in its gaping wound, hilarity ensues

I may a honey lemon chicken that's amazing, it pairs wonderfully with fish, and I often squeeze half a lemon into my chicken noodle soup. Think of it performing the same function as when you add wine or vinegar to a dish.

>Lemon is an acid that splits fat
Why is this repeated on /ck/ from time to time? Lemon does not chemically alter the fat, but it does provide balance to fattiness.

Lemon, paprika and rendered fat work well together - it almost makes a dressing out of an oil slick (the paprika will help the acid and oil emulsify somewhat). Get some taters in/under there to soak it up, and you got yourself some alright piri piri chicken, I tell you whut.

You can taste it. It also neutralizes "fishy" smell on sea foods. Acts as a natural preservative for stuff like avocado and apples that oxidize easily.
