I found a solid pecan pie recipe on some crazy whore's website and it turned out quite good, so I thought I'd share.
Crust
>1 unbaked Flaky Pie Crust (what I used) or All Butter Pie Crust
>Egg wash for pie crust: 1 large egg beaten with 1 Tablespoon milk or heavy cream
Filling
>2 and 1/2 cups (250g) shelled pecans (pecan halves)
>3 large eggs
>1 cup (240ml) dark corn syrup
>1/2 cup (100g) packed light or dark brown sugar
>1 and 1/2 teaspoons pure vanilla extract
>1/4 cup (60g) unsalted butter, melted and slightly cooled
>1/2 teaspoon salt
>1/2 teaspoon ground cinnamon

Yes you can substitute it with honey and maple syrup as well for a more complicated flavor profile. It does change the texture but not in a bad way, I especially like the honey as a substitute but a little maple syrup brings a lot to the table as well, both will tone down the sickly sweet taste you can get from the corn syrup.

Oh shit my bad dude I read that as I should have chopped them and I went off on my hate filled rant of finely chopped pecans in pie, I apologize. As long as you chop them really roughly I still think it’s good. Sometimes I roughly chop like half my pecans (by roughly chop I mean basically chop them in half) and then the rest of the pecans I leave whole. Again sorry for jumping the gun man, enjoy your thanksgiving!
