You realize that everything you mentioned is subject to massive amounts of variation, right? I don't think I've ever eaten at a barbecue restaurant that served on paper. Shitty white bread is actually pretty bad with bbq because it lacks the structure to stand up to the sauces and grease from the meat. And the whole sauce thing isn't actually that important; people have preferences but only spergs will turn away good barbecue because it doesn't have their preferred sauce.

None of that is true except for individual establishments having their own traditions, but even then its not "just because". Most were passed down recipes and techniques from family and friends, and it's unlikely that they're being passed down by Alton fuckin Brown or something, so of course there will be some nonsense in there, but generally a longstanding pit will have some good food anyway so whats even the issue?

This. Of course there's room to question traditions, but at the same time, a good barbecue place is making good barbecue. There's definitely some justification for sticking to tradition if places are making a great product.

It's like how In-N-Out always makes their burgers the same way. Could they be improved by changing some things? Maybe. But would it be the classic In-N-Out way? No, it wouldn't. And the classic In-N-Out burger is a wonderful burger that has stood the test of time. If you wanna beat In-N-Out burger, don't try to reform it from within, go start your own burger joint and show em what's what.
