Honestly half the ingredients used aren't even native to China, raw sugar wasn't even really a thing until industrial cash cropping in the 20th century and most of the salt in Chinese comes from either picked or salted products- not raw salt.
For instance adding fermented soya beans to a soup instead of soya sauce

When I was in grad school I worked with a Chinese national who was also getting his PhD. He recommended this local place that had two menus, regular American and actual chinese food.

The American menu was on the readerboard above the counter, and all the usual shit like sweet and sour pork, and general tsao. And then the real menu was all written on pages torn out from a ruled notebook, and taped to the wall, all written in chinese. I guess they were slightly sympathetic to non-chinese speakers, and a few of the chinese items had their dish names written parenthetically in English. Just a vague description of what looked much more profound in Chinese.

One of them was just labeled "garlic pork."

Actually one of the things I remember most about China is that there just aren't fat people desu.
I think I say maybe 4 in as many months, and they were internal tourists from Beijing.
One of the biggest reasons is surely that China hasn't adopted processed sugar like Thailand, Korea or Vietnam.
