1) You are pouring the water too quickly, there shouldn't be splattering. Get closer to the grounds and pour slower. You may want to get all your water in as quickly as possible in the hopes of speeding up your brew, but a poor bloom will slow it down more than you gain from having the water poured 3 seconds sooner (this goes for the rest of the brew too not just bloom)
2) If your grind is too coarse, it will let all the water through instantly. You may want to tighten your grind.
3) you are swirling too vigorously

Medium grind, similar to V60. Bout 20g. I first bloom for 30 seconds with just enough water to saturate the grounds. Then fill with off-boiling water, pouring at a natural pace. Stir for 10 seconds, and then let steep for 60-70 seconds.

Any pourover chads about? Just got a v60 and my cakes are looking pretty clean, but a little muddy. For espresso I'd assume the grind would be too coarse, so water is passing through too quickly. I'm using a stepped espresso grinder though, only about 2 notches coarser than what I'd grind for espresso. Is pourover really meant to be that fine? or is a muddy cake to be expected?

Its a paper filtered french press. Spergs and redditors think its the next coming of christ because Hoffman says he'd use it over instant if he was forced to brew out of a suitcase. Its completely and fully an immersion brewer. The "pressing" action doesn't create enough pressure to affect the cup at all. The paper filter is the only reason it could be considered "forgiving". Brown water will come out of one end with no sediment, so use whatever fucking grind you want, its going to make shitty coffee regardless.

Buy yourself a cafetiere, and try coffee from some smaller roasteries, see if there's anyone local doing it, don't be afraid to ask questions, and try a variety of different coffees.

Also bare in mind different roasters will roasts the same beans different ways, and there are many different coffees from one origin, so for example, if you try a colombian and don't like it, don't just assume you don't like any colombians.

On the bloom swirl if you're doing that you can swirl everything together but on the Rao spin you should be swirling the V60 alone. Make sure you let it drain just enough too.

If you're filling your V60 right up to the top or almost to the top, there's no technique in the world that will allow you to swirl without spilling. Either slow down your pour so that the water level never reaches too far up, or wait for it to drain down a little and accept that you're going to lose a bit of the coffee grounds stuck around the rim of the highest level the water reached during your pour.

It's generally very good. Very complex. Toasted pumpkin seeds, squash, chocolate, cigar shop tobacco aromas. Dry-process heirloom cultivars; small, irregular beans with few defects. Lovely at a full city or even vienna. 20 years ago I was drinking stuff similar but also had extraordinary dried apricot notes. Like an apricot pipe tobacco in liquid form. One of the elder coffee cultures. The cost is mostly because of the fucked up war. 10 years ago you couldn't even get any though. Personally, I feel that buying it helps to economically stabilize the country. I like to think some of the money ends up going to regular people there.
