They really aren't. Yes each state may have some sort of specialty they eat because of what they produce locally or as a quirk of their location but 95% of the food is identical across the nation. One area may favor one thing over another like the south favoring fried foods but it isn't exclusive.

Honestly, I think it's because 99% of Americans only know white washed "Chahneez fewd" that they don't want to admit the real stuff exists. Living in a majority Chinese city is the only way to get real diversity in restaurants selling food from across China's cuisines.
