The easiest way to convince you would be to have you try some. It's basically what it says it is - Muslim Chinese food, or Chinese Muslim food - but Chinese approaches to Central Asian/Middle Eastern ideas, and vice versa are pretty tasty. I've never had it as haut cuisine, but if you applied modern serving ideas to it, there's no reason a lot of it couldn't be. If Hakka can be plated nicely, so can Uyghur.

Dapanji's traditionally some serious sloppa, but to plate it with a two-tier method, where the broth is present, and used in the preparation of the other ingredients, but they're not served in it, and have everything else plated appropriately... or even thickening some of the broth to use as a sauce under the chicken and veggies, plated with a bit of the old 3D in-out in-out, 90-30-45, right savage like. It could be made to look modern.

I've been to both Xinjiang and Qinghai and had Uyghur and Hui cuisine. The handmade noodles in Xining where pretty based. I would regularly go to the halal section of the cafeteria at Fudan University when I was studying abroad there. One time I accidentally brought food out of that cafeteria and the workers followed me and yelled at me to come back cause they thought I would mix up the eating utensils. Not sure if that’s an important thing in halal, but the food was great otherwise. I would regularly get noodle soup, or braised lamb, chicken or fish over rice. Probably my favorite food, next to the fried noodles and soup dumplings from the main side. It was so cheap too, all for like $1.50 USD.

I didn't discover the halal canteen on campus for ages when I was studying at Zhejiang University
I was standing in the corner of the cafeteria like a freak rapidly putting characters in to pleco then searching them on google images to see what the dishes were and I came across paomo
It was a lamb noodle soup with broth soaked bread. Sounded odd thought I'd give it a try because it was only 15 RMB
Such an AMAZING dish, bread soaked in fatty lamb broth, lightly seasoned, but every dish also included some pickled garlic and chilli sauce which helped to cut through the fattiness. It was THE perfect dish for the winter.
I didn't try the other dishes there because that was it for me.
The stuff in the main student canteen could be pretty hit and miss, but they had a pretty banging Re Gan Mian and the skillet dishes were pretty decent too.
The food in the International Student Accommodation Restaurant was a bit more expensive, but you got more, it was nicer, and you could share a meal with friends.
I want to spend another two weeks in China just going around eating stuff I loved, and trying more stuff

That was one of the noodle soup dishes I remember having actually. I agree, it was delicious and super filling for very cheap. I had enough Chinese reading experience at the time to get an idea of what I wanted, too bad it’s almost lost on me now. Yeah we had a mexican chain there too, Mojitos. Like 5 minute bike ride 15 minute walk from where we lived on campus. Certainly wasn't the best Mexican food, but it was close by, and made a change. Drinks were cheap and us foreigners enjoyed it a fair bit.
When I say international restaurant, it was just a normal chinese restaurant that was in the international student accommodation. Typical stuff like 蛋炒饭,麻婆豆腐, 糖醋里脊

OP here. Just tried some authentic Chinese Muslim cuisine yesterday. I say the food is pretty high quality aside from being unnecessarily oily and spicy, and for some deep fried dishes unnecessarily dry. You can try eating some deep fried chicken with chili and it’s probably no different than eating the soil of Saudi Arabia, basically oily desert. The nan is also decent. And the star was pic related, an Uyghur-Sichuan bastard dish called Dapanji. The noodle is called Laghman, can’t comment whether it’s related to Lamian or not. The dish is basically chicken stew with bell pepper, onion, garlic, Xinjiang spices, half of Saudi oil reserve. I enjoy the taste, I just don’t appreciate greasy food much since I tend to get bloated eating them.

I know Taiwan offers similar scholarships, though I'm not sure of the requirements compared to the Chinese one. With the Confucius Institute one you needed to have HSK Level 4 or above when I did it, but I think with the Chinese Government one it's just first come first serve.
A massive advantage to the Taiwanese one is that you're entitled to take paid work on a student visa whereas you couldn't on a Chinese student visa when i was there
