Usually I love cooking but not today. Don't know, I'm kinda feeling down. It's raining and 10°C (50°F) outside. What's the perfect, easy to make dish for these days? No, I'm not ordering.

Veggie soup and some nice garlic bread. I start mine with olive oil in a big pot, and toss in leeks, carrots, some celery, potatoes, mushrooms, etc. as I cut them up. Maybe I'll add some turnips or parsnips, maybe even just dump in some rinsed beans. Salt and pepper, dried herbs, maybe chili flakes, and then some chicken stock and simmer until it's all tender. Finish with fresh herbs, a drizzle of olive oil, and maybe grate in a little fresh parm. While the soup cooks, pop your bread in under the broiler. It's an easy, inattentive dish with great flavor, it's hot, it's comfy.

I always keep potatoes around, carrots and other root veggies last forever too (not baby carrots that sit in water in the bag), as does celery. If I want a veggie soup all I need to grab are leeks, mushrooms, maybe herbs unless I've got some leftover, and stop by the bakery section for bread. Keep a few staples around and it's pretty easy to be flexible.

That's just your mood. Once you decide to put the pot on the stove and get started, soup is something that almost takes care of itself. Put on some music or a show in the background and just do it.

I keep two bags of soup vegetables in my freezer. I cut them up ahead of time and freeze them. One bag has aromatic vegetables and one has a mixture of other vegetables. Then I keep canned diced tomatoes, broth, and grains on had for when I want to throw together a soup. You can cut up your vegetables now, and put it on your list for when you feel better to get more. Prep them and freeze them for later. You can do it, anon!

I would just eat that on the side, DESU, maybe spread it on toast. Canned tuna is so flaky it really won't hold up well, even if you just stir it in at the end.

Chicken stew or mull, takes like 15 minutes of work probably 2 hours in all

Boil entire chicken (put stock stuff in if you want it doesnt matter)
Keep broth
Shred chicken
In side bowl combine like a cup of flower and some milk mix it up
Add that paste into broth
Add chicken
More milk then paste until its thick

Serve with saltines and hot sauce
