I made multiple stocks and culinary school and also in restaurants and at home
at one place after we roasted the bones and the mirepoix We put the stock on at 8 am and did not drain it till 8am the next day.
A rule of thumb is fish stock or shell stock also known as a fumet takes 30 minutes to 2 hours, a a chicken stock and can go from 3 to 6 hours, and a beef broth can go from 6-36 hours.

As far as my knowledge goes The only time the name of a stock changes is based on how far you reduce the liquid after everything strained out. A Demi is reduced by half/two (sometimes three quarters) And if you reduce that by 8 then you have a Glace De Viande, once reduced by this much the beef stock resembles a very dark rich syrupy consistency.

Well I have found "bone broth" to be better than a lot of the stocks on the shelf that come in the plastic containers I don't think it's worth the price if I really wanted to use a good stock that bad It would be cheaper to just buy a small amount of bones or garbage cuts of meat Make my own stock and reduce it by a lot and freeze it in little ice cube trays It would blow that mass-produced "broth" out of the water at a cheaper price.

Also I'm not sure if you were aware, The name is a contradiction in itself broth is stock made from meat, while stock is broth made from bone

Typically bbq was eaten with white bread, pickles, raw white or yellow onion, and sometimes with some cheese. That is what bbq was and pretty what bbq still is in texas.
