>Whats your set up?
I recommend a stand mixer, first time using it and results were great.
Let dough do a cold rise for 2-3 days
I used a stone heated in a max oven for about 50 minutes (mine reaches about 550f/290c).
Let dough come to room temperature over half an hour to an hour.
Shaping is something takes practice, but a round baking pan can help, I used an upside down one when practicing.
Don't use a rolling pin.
Sauce, cheese, top and into the oven for 5 minutes, turning occasionally. Once the 5 are up, check your brownness, turn on the broiler/top and let it go for another minute or two, again keeping and eye and rotating as needed.
The end result for me is a crisp bite on the crust with a soft chew and the cheese/pepperoni nicely rendered.

I do not, I use parchment paper. I slide the pizza in using the paper. After about a minute, the bottom sets and I can easily slide out the paper. I have not noticed any downsides to the crust this way. Plus it gets me into the habit of checking the pizza for rotations.

fuck, I was looking for one of these threads yesterday when I made this, cowboy candy (candied jalapeno) take jalapenos and remove the seeds slice into rings then cook it for a little bit in a vinegar based syrup, put the peppers into jars, cook down the syrup for a few more minutes then pour it over the peppers, they are supposed to mellow for a month before eating so I can't say for sure that they are really good but I tried some of the syrup and its a nice spicy and sweet flavor, far right jar is extra syrup which is supposed to be a good glaze for meats, I used a little in some mac and cheese and it was pretty good.
