start with some room temperature butter. the trick is to put the butter onto the both sides of the bread and not into the pan.

>lowest setting, 30~ seconds
>stick butter onto both sides
>lay bread into preheated pan at medium heat
>one slice of cheese
>salt, crack of black pepper
>another slice of cheese over that
>butter up last slice of bread and top it off
each side should take roughly 4~ minutes to form a gold crust.

Just use some sort of cheese you like that'll melt and shred some extra cheese. Make your sandwich and fry it up with some nice butter like plugra or something. When it's about done, put the extra cheese on top and flip so the cheese gets crispy. Remove from pan and cut diagonally after about a minute or so.

Real butter, medium heat, patience. Flip more than once. Goal is to get the toasting nice and golden, and soft bread into nicely toasted bread, esp the crusts. For me, the goal also includes a more substantial bread with delicious crust something artisan or sourdough even, and I'll grate at least one of my cheeses onto the bread, so I can get some of it falling out of the sides, and extra crispy edged along the crusts. Sometimes I sprinkle some sea salt, to flavor the butter more. If the bread is fluffy vs dense, feel free to smash it down a bit.

I have nothing against mayo's ability to crust up which it does well, but I if I were to use it for basic grilled cheese, I'd still need some aspect of butter for actual butter flavor.

There's a recipe I use to garlic-toast bread that came from Rusty Pelican restaurant, and it's thin spread of butter down first on the bread, then a thin layer of mayo, then a sprinkle of garlic, then a thin layer of parm adhering to that moist crust. It's delicious to toast something like a hot ham and cheese, patty meltt, or something more Italian, like a leftovers kind of thing, some thinly sliced roast beef w/ peppers or onions kind of sandwich. Garlic and the saltiness of external cheese is delish.

Get sliced American cheese and a bag of finely shredded cheddar.
Butter on the outside, stick shredded cheese to butter. American cheese on the inside, duh.
Preheat pan on a medium-low heat. You're toasting the bread and melting the cheese, not frying an egg.
Put it in the pan, cover it.
Let it cook until the cheese in the middle has melted enough to keep the sandwich together.
Flip, cook uncovered. Repeat as necessary until both sides are crisp golden brown.
Cut diagonally or go to hell.
