Which of these is a better deal? Going to be used for making chili, meatballs, and burgers.

73/27 ground beef for $1.59/lb
vs
80/20 ground chuck for $2.99/lb

73/27 is great for those things but a bit on the fatty side. It's a matter of taste, but that's almost half the price of 80/20.

$1.59/lb / 0.73 = $2.18/lb of no fat
$2.99/lb / 0.80 = $3.74/lb of no fat

Always do that calculation on beef when they play the percentage game with you.

After knowing real numbers, it's all about use and how much fat you can tolerate in the cooking.

If you don't have a gall bladder, then 73/27 is off the plate unless you drain all that fat.

Fore meatballs and chili, 73/27 is great.

73/27 is only good for burgers if you're doing them on a grill.

As for ground vs. chuck...
Ground can include anus, testicles, and liver; it's anything that comes from the cow.
Chuck is specifically the tougher shoulder cut of the cow.
