I always wanted to do a food truck/stall that does oyster poboys. All you'd need is to dump the oysters in the fryer while you slather mayo on the bread then throw it all together: wouldn't take more than a minute or two to toss out cheap poboys by the dozen.
Could probably include other options like shrimp, but fuck I love fried oysters.

Once you’ve already got sandwiches going it’s too easy to offer a variety of meats. While the oyster and shrimp po boys would probably be a serious draw for returning customers you’ll probably make a lot more money and be able to partner with breweries and stuff if you have more broadly appealing options like more typical sandwich meats

I prefer to have a less dressed oyster poboy, personally. We do this thing called "oyster boats" or "oyster loafs" here. You hallow out some of the french bread in a boat shape and slather it in butter, toast it on the griddle or under a broiler while the oysters fry and serve it on the fried bread. the oysters stand out better on they own.
