Yeah Aussie food as a whole is pretty weak but you have to look at it through a historical lens to understand that really Australia's base was already the peak of other cultures foods, and we've only been a country for like 200 years. So really in terms of cultural innovation there's been almost no time. Plus a population of 24 million certainly doesn't help speed stuff up.

That said when you consider the foods we eat, they're high quality and the recipes are good, just not "Australian". Also
-top tier meat pies and pastries
-great seafood when it's not $75/kg for prawns
-high quality meats, just in ways that can be considered unique dishes (eg a rib eye with veg isnt exactly going to have a unique name)
-innovation when it comes to burgers. Beetroot, egg, pineapple, all good toppings

I'd say we have a budding culinary scene that's just waiting for someone to come along and flip it sideways. Especially when it comes to baked goods, proper damper is goat, lamingtons, pavalova, etc are all good if not a bit basic.

Oh and vegemite is delicious, but I always see foreigners eating massive spoonfulls of it. Like no shit it's not going to taste nice. You wouldn't judge soy sauce by drinking a fucking cup of it.
