Warning; because of a strange work schedule I didn't get around to cooking some vegetables and plating a meal.
This thread will only show the cooking of the meat. If it's still up tomorrow when I get out of bed I'll plate something and post a pic.

It was a pretty heavy hare. Well fed but not fat. I'm not sure they are capable of getting fat.

I did a bit of a sloppy job to be honest. I was in a hurry because I needed to get him simmering to I could go to bed. Not like I was going to save the skin anyway.
I did save the two front paws for drying. They're supposed to be lucky. Unless you're the hare I guess.

I accidentally dropped him on the lawn and got grass on him. It washes off. It's fine.
I usually eat hares when I'm hiking/camping and those are roasted over a fire. A little grass and hair won't matter in that case, and I guess I've got into a habit of sloppiness because of it.
We're roasting this one in the ol' iron roasting pot.

What else is in there? Onions and apples, a couple chilies, a hefty portion of garlic and juniperberries, couple hundred grams of bacon, bayleaves.
Bacon is pretty much required for these lean game meats.
Braising liquid is half a can of strong lager that was left over from the night before.

Tender and juicy and much tastier than I expected. I was a little worried that he was so big because he'd got into town and started eating trash like some animals do. While I love a pigeon I'd never eat a city one, you know?
He was really delicious, though. And stomach contents did look like grass mostly, not that I inspected it closely.

Anyway, the real reason to cook game animals is the gravy and like I said; if the thread is still up when I get out of bed I'll separate the cooking liquid and thicken it up for gravy. I had a sip and I can tell already it's going to be lovely. The juniper works great with the hare.
Not a very strong game taste to him, incidentally.

I went to the store to buy some brie for breakfast. He wasn't there on my walk out, but he was there on my walk back, so I knew he was very fresh. Probably no more than 20 minutes.
Also still nice and warm when I cut him open.

I put him to good use instead of leaving him there to be pancaked by the morning traffic.
Speaking of; the body was in fantastic shape. He must have only just caught it on the head.
Had a broken collarbone and fractured skull. I was prepared to toss the whole thing if it was smashed up good, but that wasn't the case.

I wouldn't trust anything smaller than a 5.5 mm. air rifle for hares and I wouldn't be too happy with that either.
When I hunt them while hiking I use a 55# recurve bow. Much less weight to haul around than an air rifle or firearm.

The "common sense" of not picking up dead animals you found lying around, and not eating them, is comparable to the same with mushrooms. It's not that it should never be done, but rather that if you don't know what you're doing, don't do it.
The main facets of worry with found carcasses are decomposition, disease, and parasites.

In this case,
Decomposition is not a worry: The carcass was very fresh, the skin intact, and the innards were not ruptured.
The worry for disease is very, very minuscule: It was found near the roadside with no predator wounds, a broken collarbone, and a fractured skull. The cause of death was certainly due to blunt force trauma. It hasn't been taken by other wildlife. It was the time of day where it is common and appropriate for them to be out and active. It looks well groomed, it doesn't look mangy or otherwise show signs indicative of disease.
The worry for parasites is no more than with any wild game taken by hunting: This is why you thoroughly cook it.
Also, your local government will typically issue, or otherwise make available, notices regarding any prevalent or irregular problems with wild game.

Applying traces of lead to your meat is a personal choice, not an inevitable result of hunting.
With large game you don't really care. You can easily cut and discard the small amount of meat at the wound if need be. Assuming you used a bullet with exposed lead, or even a firearm at all, in the first place.
With waterfowl or upland game it's a non-issue as you should only be using steel or plated shot.
With small game it will be a non-issue if you're properly hitting them in the head. Alternatively you can opt to use plated rifle/pistol bullets, to use steel or plated shot, or to use bow and arrow.

I really applaud you Anon for eating that rabbit you found. I remember skinning and eating a rabbit a part of survival training when In cadets when I was 15.
We basically learned to nock and skin it, we then removed the organs(some kids rabbit was pregnant when they sliced it open) pushed the poo pellets outs, cut the loin steak out, cut that into cubes and pile all them all together communally then pan cook it. To be honest it was absolutely disgusting, tasted exactly liked it smelt made me gag but I managed to have a few chunks of rabbit before the instructors pulled out a myriad of sauce and said we don't have to eat it by itself

Take knife, cut under the spine so there is a small gap between abdomen and spine
snip off spine
discard abdomen

An almost completely undamaged body which was very freshly killed is perfectly fine. Not in any way worse than bagging the animal with a weapon or trap. You know this if you think about it like a reasonable person.
Hell, I brought him straight home and butchered him while the body was still warm. Lots of hunted animals are kept at ambient temperatures for far longer before they are cooked or refrigerated. That bunnymeat was fresher than anything you ever got from a supermarket. Fresh enough that I could probably have made it twitch with an icecube.
