On weekdays I drink coffee for caffeine only so each night I make a pot of cheap generic coffee that comes in the big 3 pound tins. I let it cool then pour into my half gallon thermos. I put a half teaspoon of cinnamon chunks and a mace blade into a tea infuser and hang that in my thermos. I refrigerate this overnight with the thermos uncovered and in the morning I remove the infuser and enjoy.

I save the nicer coffee for weekends when I have time to drink it hot and fresh. Usually I'll just drink it black but occasionally I'll froth some cream with a little nutmeg ground on top.

I buy whole beans, grind them, then toss them in a shitty $15 percolator. As someone who used to buy pre-ground or instant coffee, it's a massive upgrade.

I think the worst whole-bean coffee is probably better than some of the best pre-ground. It reminds me of pepper, where the taste is just so different compared to freshly ground/cracked.

I drink it black, or with milk if I need to cool it down or go easier on my stomach.

Use 95C or off the boil, especially if it's a light roast, you extract more sweetness and acidity at higher temps. Just grind coarser and finish pouring by 1:45. Also I hope you don't have stale coffee. Dialing in is a bitch especially when just starting out, there's nothing more frustrating than finishing a bag of coffee without ever getting it right.

Depends on if you're using preground or grinding specialty beans yourself. Grinding yourself means you can grind coarser and have it not overextract/burn. Preground is a pain but you still manage to get something decent out of it with proper temp control.
I usually do it like this:
>preheat to medium if electric stove
>fill basket to the rim without tapping too much or tamping at all
>use boiling water
>try to get the coffee out as quickly as possible yet with a steady stream(play with temp, lower it as low as possible when the coffee is coming out but aiming to retain a steady stream)
>at the first gurgle take pot of heat and cool it down with some cold water from the sink
>pour immediately in cups
If you're pouring two cups the second cup with the last of the coffee will usually be more extracted (some autists only brew the first half of the moka pot and leave the rest)

I grind my coffee with a cheapo hand grinder off amazon. There are better out there but it's adequate.

That said: I use an electric stove, fill the water in the boiling pot to the bottom of the valve, sometimes a little past that. Grind my coffee to roughly a bit bigger than table salt, but not quite kosher salt. I heat it from cold and haven't had any problems, but pre-heating the water while you grind the coffee can cut down on time just a little bit and bitterness, but I'm okay with a bit of bitterness. Once the coffee starts coming up into the top, I I usually cut the heat down a bit, and once the coffee reaches the base of the spout (that little v-shape that it makes) I usually turn the heat off entirely, let it fill up a bit more, and then take it off the burner to finish up.

Cooler only really works for darker roasts and is a variable you dont want to change too much in a v60 since cooler water slows down your drawdown which often leads to overextraction which is what you wanted to avoid. Fix your variables, mechanize your technique so that it's consistent and play with only the grind size first. Its always better to start coarse and undextracted and move finer till you taste bitterness and stepping back rather than wade around overextracted land and trying to find sweetness by dialing back. Beware of bitter/sour confusion.

I have kind of a cheapish electric burr grinder that I took from an ex after the breakup; I'm not even sure of the brand, but just pulled it out of a storage box the other day and it's not working great (it's like 7 years old). Nah adjustment is not made very clear. When 1Zpresso says 34, they mean 3 full counter-clockwise rotations from 0 to 0 starting at the tightest setting, and then 4 of the labeled numbers, so you end up on the '4' 3 rotations past the tightest setting. Imo it's easier to say it like 3.4.0, 3 full rotations, 4 numbers, 0 clicks past 4.

Alright I ended up asking the roaster. Apparently they recommend a really high dose (like 1:13) and medium coarse grind. And apparently they roast darker than usual as a Japanese roaster. I think I've been approaching it like a city/medium roast when it was actually on the darker end. My mistake for not choosing the right roast. Anyway I tried cooler water (sub 90 degrees) and finally got rid of the bitter taste. I'm at medium coarse and used 86.5 degrees, 1:14 ratio, 2 min brew time. I can sense some of the fruitiness now but I don't have any sweetness. I'm thinking about adding a click of fineness and reducing water, but I'm not sure yet. Maybe I could do 1 degree hotter too. I wish pour overs weren't this frustrating.

just my opinion but I don't like playing with all those variables and just use 205F water for all coffees because that's the hottest my kettle will hold the temp at. I doubt 1 degree differences would be very noticeable. the grind by far has the biggest effect for me, and then dose. I generally stick with 1:15 for v60. stronger ratios muddle the flavors for me.

how's the finish? if it doesn't linger nicely, tempting you to drink more, you can grind finer. this is the main way I dial in. if it lingers unpleasantly and for way too long, you need to go coarser.
did you taste the coffee "correctly" brewed and roasted? are you roasting this yourself? if so, try letting the coffee rest for a week. yes, a whole week.
what kind of fruitiness are you looking for? jammy flavors are found in medium-dark roasts and bright ripe fruit/citrus is more of a light roast thing ime. I much prefer the jammy flavors.

My grinds always end up like a solid clump of sludge after a pour. However, even at my current level of grind, my pour takes under 2 minutes. if i go any coarser, the water basically goes straight through. what am i doing wrong?
