Joshua W is a good cook but his personality is pretty cringe, and it's weird to me how he flexes about things like shaving his own katsuobushi. I mean, I get it, I like to make things from scratch and do involved preparations, but he really takes it too far sometimes imo.

He has no apparent skills. His background is: no-education, sushi restaurant prep cook. He was once fat and became unhealthily anorexic and wrote a book about that.
Because of his extreme lack of experience, and for being under 5’10”, most of his video consists of him trying to compensate for being so shit.
Watching him is like turning on a cringe compilation and hitting myself in the nuts.

He makes pretty decent dishes and is good with a camera. What keeps me from watching him regularly is his shitty editing and keeping his stammers in the final product and quirky gay humor.

I like the fact he goes more or less straight to the point. Most of his videos are actually under 10 minutes long, which is remarkable in this day and time.

All the other youtubers all try to have some sort of quirky personality to build their own social media community/ cult. Made the Japanese Milk Buns he brags about so fucking much and they were a 7 at best only due to it being the fact it was fresh bread. Much to thick for a fucking burger or chicken sandwich just pay more for some decent hamburger buns 9 times out of 10. its more about the tomatos soaking in their own juices and its own acid breaking down the sugars than it has to do with ripeness. thats what makes canned tomatos good for things like sauces, theyve had time to "pickle"/"ferment" in their own juices which creates more depth of flavor. you just need to discern when to use a fresh tomato or a canned tomato, they're both for different applications.

By far the most educational channel but his editing took a nosedive into unwatchability this year.

honestly I only recently watched some of his videos and of course I went to check for simple and cheap recipes. First I though, nice, because he had some dedicated videos to that, but the guy has no conception of simple means when cooking. Total waste of time for me.
