Grab a ball of meat and toss it between your hands to compress it. Squish it down and tighten up the edges. Slight depression in the middle so it doesn't puff up. Don't be a smashburger loser and don't make a fatass hunk of shit. Just above a half inch is fine

A couple minutes have passed. If juice is pouring out of the top, you've fucked it up. A little "sweat" on top and a little color on the side is all you need to see to know it's time to flip. Now gently poke it until it starts firming up from rare to med-rare.

No. Fresh is important.

Probably taste like nothing, certainly isn't "good cheese" like you say is important.
>Sweet honey mustard and baby rays
Sounds way to sweet. There's nothing to balance it off, it's only made worse by the sweetness of the sauteed onions. This distracts what burger is supposed to taste like. Probably taste ok for people that consume lots of sugar.
>Ham AND bacon
Sounds like too much, again distracts the main flavours you want, from the beef. Good burger toppings should enhance the beef, not mask it.

What a mess. Going through about 30 different steps to make an overcomplicated hamburger that's too tall to eat and unironically using shit like shredded cheese and bagged salad.

And do you unironically cook in serial like this? At first I thought you were doing it to make the tutorial work, but you were seriously giving instructions on reheating cold ingredients and wrapping things in foil to keep them hot. A hamburger should take about 10 or 15 fucking minutes.

Strong cheese is good in hamburger, especially if you like cheeses. I also had a hamburger that had apple slices in it and it was pretty good, so I vouch for that, although they were prepared somehow, can't remember if they were pickled or something else.

>> No.14903938

>If you’re using store-bought ground beef, or if you bought pre-made patties, you can’t just cook your burgers to medium-rare and call it a day. There’s tons of bacteria trapped in them from the butcher’s work area.

>You don’t have to burn them to a crisp, though. Just pasteurize them. Start the process exactly like you would with any other burgers, but once they hit 138-degrees, you should pull them off of your grill, wrap them in tin foil, and then put them in the oven for 12 minutes at 140-degrees. They’ll be just slightly past the medium-rare mark, but they’ll be safe to eat, and they’ll taste a lot better than the well-done burgers that the USDA recommends.

Bacteria can't live at 140 degrees for 12 minutes straight, it's a fact.

Granny smith, sliced very thinly, given a bit of lemon or white wine vinegar to prevent browning. Most sliced apple in any restaurant will be given a wee acid/brine bath to keep from getting brown and soggy.

Danablu's been my go-to for blue burgers, but only because I can grab it in sheets for minimal fuckery.

Red onion will be milder if you want a raw slice of onion. White onions have the most pungent flavor, while yellow is in between. The longer you cook any of them, the sweeter they become through caramelization. It just depends what flavors you're looking to add to your burger.

why they make big burgers like those you can barely hold or eat making it a big mess.

Burgers are suppose to be small , easy to handle and eat.
I prefer 2 pattt with that meat , share the amount of lettuce , onion and other toppings between those two to eat it without them becoming a complete mess.
