I’ve been eating it more since 2016 since having a bunch of lamb in Iceland. Had a wonderful lamb soup there. The gas station sandwich of ground lamb with taco seasoning was interesting. And I order lamb Indian dishes all the time.
But yeah, generally not a burger thing. You might have to go to a Muslim or Middle Eastern butcher you get cuts you want. If you want goat, find a Mexican meat market.

Lamb isn't one of the big 3 meats (pork, chicken, beef) but it's not uncommon. A better example of a meat Americans don't eat is goat. You can't get it at a regular grocery store and have to go to an Asian, Indian, Middle Eastern, or Mexican grocer to get it. The only restaurant menus its on are ethnic restaurants, and even then plenty of ethnic restaurants in the US don't serve it.
