It's the minerals.
Water is something like 98% of the brewed coffee, it makes sense that you can taste it.

Whether that change is because of the flavor of the water itself, or a change in what that water extracts from the coffee, or a reaction between the water contaminants and the coffee... nobody knows.
Coffee just tastes better when the water tastes better. Probably want to go with charcoal filtered instead of RO.

I put pick related in coffee one time. It tasted disgusting.
It makes water taste good though.
