So I got this Smoke Dry Mackerel from a russian market, because they didn't have trout
I liked the oily, jerky like flesh I got last time but this is hella fatty and squishy and does not taste good cold (refrigerated)
I removed the head and filets and through away the skeleton, wondering if I can cut it into some thick strips and lay it out on a cutting board to dry over a couple days? I did it with a few pieces and liked the results, definitely a firmer experience

So what part of the world has this? I’ve never heard of it, but I would try it. Soft squishy fish jerky sounds kinda offputting though, so I can understand wanting tougher stuff.

Smoked mackerels are a classic. But you just have to not think of them as jerky, since they arent dried. Its more like just baked fish or whatever. But cold. Really good on some bread and butter as well.

Americans don't eat nasty oily mackerel because it's just too much a dark meat-red blood fish. We don't need to eat food just for staying alive and poverty reasons. We are far more particular about our fishy fishes for not being too damn fishy overall.

Throw it out/feed it to a cat.

OP didn't actually get fish jerky. Anyway, Asian shops should have what you're looking for. Both dried fish and squid, and both are delicious with beer.

Yea this is a smoked fish. Goes great with beer or maybe a coupe slices with fried potatoes.
