I worked as a cook in restaurants for a few years. all you need to do is to is poke the meat. when you cook enough steaks youll get it down.
if your trying to figure out which part of your hand feels like what temp ur just a noob. cook more steaks it will come to you naturally.
austitically following rules makes cooking unfun, everything should just flow naturally and when u get better at cooking ull know what i mean

oh and dont forget that its better to error on the side of a little underdone because it will carryover, if you wait till medium to pull it off it will be medium+ or even med well. You can always slap a little more heat on it if its underdone after all

This works only on fresh meat steaks, over 3/4 inch thick. Thinner steaks tend to feel "firmer" more quickly. Dry aged, firmer from the het go.
