Removing the pancreas is a last resort surgical option since they usually have to cut out chunks of your duodenum, blie ducts, and stomach as well. Then you're on insulin and enzyme pills for the rest of your life, and your quality of life typically doesn't improve beyond how things were pre-surgery.

You'll have to go through years of not responding well to dietary intervention and medications before any doctor will even begin to consider the surgical option.
