Honestly I can't think of a single Asian noodle dish that stands out to me as better than their non-noodle dishes.

a nice trick to get "lo mein" style noodles if all you have at home is spaghetti is to add some baking soda into the boiling water with your noodles. it adds alkalinity to the noodles, giving them a softer texture while also giving the brown color of traditional egg lo mein noobles
