Reuben from a 1937 Nebraska government web page.
This site is good reading for folk interested in history.
https://history.nebraska.gov/blog/was-reuben-sandwich-invented-omaha

>> No.14760374

Could be lore... from the Nebraska site:

According to Omaha lore, the Reuben Sandwich was dreamed up at Omaha's Blackstone Hotel in 1925 by Reuben Kulakofsky, a local grocer, to feed a group of late-night poker players. Charles Schimmel, one of the players and the hotel's owner, liked it so much he put it on the menu of The Plush Horse, the hotel restaurant. A competing claim comes from the family of Arnold Reuben, who owned a series of New York City restaurants. Although there is evidence that a sandwich similar to the classic Reuben was served at Arnold Reuben's restaurants, only family stories substantiate his claim to THE Reuben Sandwich.

There was a lot of recipe stealing going on among the old tiki bars. The original Zombie and maitai recipes were sort of lost to time for a while. Don, the inventer of the zombie, used unlabeled bottles on his bar with numbers and his bartenders were only given recipes using those numbers. There's a long story about the hunt for the recipe for the zombie, eventually leading to the discover of what "don's mix" was, which was just grapefruit and cinnimon syrup.

However because of all of this any time someone ordered one of these drinks it would just be whatever that bar decided it would be. What's a zombie? Idk, mix some juices with a lot of booze. See what happens. All they care about is that it has lots of whatever it has.

So you get a thousand bastard versions of these drinks but a number of places these days are starting to use the rediscovered old recipes.

“1770 Jan. 11 - The earliest document seen in which an American mentions tofu is a letter written by the famous Benjamin Franklin
(who was in London) to John Bartram in Philadelphia, Pennsylvania. He sent Bartram some soybeans (which he called "Chinese caravances") and with them he sent "Father Navarrete's account of the universal use of a cheese made of them in China, which so excited my curiosity, that I caused enquiry to be made of Mr. [James] Flint, who lived many years there, in what manner the cheese was made, and I send you his answer. I have since learned that some runnings of salt (I suppose runnet) is put into water, when the meal is in it, to turn it to curds."

1821 - The second earliest reference seen to tofu in America, and the first to be published in the USA, appeared when A.F.M. Willich of Philadelphia mentioned it in The Domestic Encyclopedia. Speaking of soybeans (which he called "the seeds of the Chinese plant Dolichos soja"), he wrote: These seeds are used in China and Japan as food; they are made into a kind of jelly or curd, which is esteemed very nutritious, and which is rendered palatable by seasonings of different kinds."
