I usually eat the 85%/90% version. It's one of the best you can get in the supermarkets for a reasonable price. What can you buy in your country in that price band that's better?

The problem with the highest percentages is that if the coco isn't up to scratch then you're going to know. It's the same when i drink plain filter coffee. It's the pure unadulterated bean you're going to be tasting.

Good high percentage chocolate isn't bitter. Strong yes. If it's poor quality then it will either flat, bitter or both. I can't afford the good stuff often but I've had some that are woody/smoky. Some that have a citrus twang and others that are fruity. It's not a crime to add something a bit sweet to open up and complement the flavours. It's going to be a heck of a lot better than what junk they put in poor quality bars. Try nuts, seeds, conserves, port, liqueurs. Experiment.

It depends on the bar. Some use more cocoa butter and less cocoa solids which cuts down on the bitterness and cocoa butter has a slight sweetness to it that comes through with those.

I have to avoid sugar now and only eat unsweetened chocolate, and after a while it stops seeming so bitter and you can start to pick up on its other flavors. I ended up having some sweetened chocolate anyway a while ago and I could really notice how the sugar affected its flavor and it almost didn't even seem like chocolate to me anymore.
