Yeah I mean I feel like that is their gimic almost. Everything has more than 1 flavor profile. Sweet/Spicy, Sweet/Savory, Sour/Spicy, Savory/Funky, sweet/sour, etc....

There are some super bland japanese dishes that I don't care for at all, but it's pretty few and far between.

As much as I want to love Japanese food, I can't. Outside of Ramen and Okonomiyaki most of the food has the same flavor. It's not bad by no means but it isn't isn't on my bucket list when I think of foods to try out. Why is Japanese food taste the same?

japan: most dishes focus on a few distinct tastes. they actively experience every ingridient. the country is doing pretty good on a global scale.

india: pretty much every dish is a mixture of 80 different roots/herbs/spices/vegetables that they blindly throw in to a pot and call it a day. their country seems to be in turmoil.

A lot of Japanese "home" cooking all starts with soy sauce/mirin/sake, and sometimes miso. I spent the 'rona lockdown cooking J food and basically if you start with that seasoning base, it'll taste Japanese.
