I know a hot chicken place that serves it as a sandwich topping or a side. They fry their chicken breasts without the skin and the thighs with the skin on for whatever reason, so it's a good use of what's otherwise waste.

If you're in Vancouver, Downlow Chicken on Commercial does it, plus their hot chicken is great. The whole neighbourhood is kind of disgusting though and it's covered in fucking cringe posters and graffiti like "F*CK NAZIS" and "#BLM".

The food's worth patronizing the faggots, though.

You're probably dealing with industrially butchered chickens. It's faster for them to just carve off the meat and send the carcass for processing than it is to properly butcher the chicken whole. Also, sometimes it's near fucking impossible to get the lungs off the ribcage in a timely manner. If you have a grocery store with its own butcher, you can usually ask for proper breasts or even airline breasts.

Some grocery stores do have their own butchers, at least where I live. You can always check with the staff in the meat department and they'll cut your meat to order.

I bought a bag of fried chicken skin from a stall in Thailand. Fucking delicious but I probably shouldn't eat half a pound of it...
