Crush up some San Marzano tomatoes.
Sautee some garlic and basil in a liberal amount of olive oil
Add red wine or vodka and let reduce
Add the tomatoes and reduce at a simmer until it reaches desired thickness
Finish with a bit of butter, season with salt and pepper to taste.

don pepino is a canned sauce i keep on hand, it is very good. if you want to make your own, do a "raw" sauce. 28 oz can of plum tomatoes, salt and pepper, real clove of garlic (not the jar stuff), and fresh basil - about ten leaves. Blend it all together and put on your pizza.

Honestly anon the best recipe I've done is just getting a can of whole San marzano tomatoes, add oregano, garlic powder, salt, pepper, and sometimes chili flakes and just use an immersion blender with everything in the can. super easy and better than any cooked pizza sauce I've done.

Good whole peeled tomatoes in a 28 oz can. San Marzano if youre feeling fancy. Smoosh them up with your bare hands. 1/2 tsp salt, 2 tsp evoo, 1-2 tsp dried oregano. That's it. Optional ingredients: fresh basil, fresh minced garlic, red pepper flake, fresh black pepper, red wine vinegar, honey, anchovy paste, parmesan cheese. No cooking. Pizza sauce is not cooked.

You're never supposed to add water to any sauce. Use stock, water you rehydrated chiles in, anything but just water. Water has no flavor so youre effectively making your sauce flavorless.

I have several. Pizza hut's sauce is in this book too. The pic is ny style pizza and here's little caesars:

Sauce

1 12 ounce can Hunts tomato paste
1−1/2 cups water
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon sugar
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon Accent (MSG) (optional−−−but if you want it exact, use it.)

Pre−mix the dry ingredients, add to wet ingredients. Makes about 2 1/2 cups, or enough for 4 pizzas. Store in fridge for at least 24 hours before using. I used to use an immersion blender to mix the sauce but a fork works fine. Pizza hut sauce is basically the same just skip the MSG, pepper, onion powder, and add marjoram

Fry a medium dice large onion in a good amount of olive oil until translucent.
Add in 3-4 cloves or crushed garlic, 1/2tsp of red pepper flakes, 3 ~4" sprigs of thyme, and several large basil clippings. Cook until fragrant.
Add in 2 tbsp of tomato paste and 1tsp of dried oregano. Cook until a dark fond forms.
Pour in 56oz of canned tomatoes, whatever type is your preference. Scrape bottom to deglaze.

Cook until acidity is at your liking and the sauce has reduced to your needs.
Season with salt and pepper.

I use puree'd san marzano tomatoes in a can and add italian seasoning + anchovy paste.

A thin crust pizza should have a thin coat of sauce. It gets cooked quick. I nearly freeze my sauce and cheese or it overcooks and burns too much before the crust is done. 550F under a broiler on steel.
Maybe those huge deep dish pizzas need some pre-cooking but not NY style.

I like lots of crushed garlic add that now
1/2tsp of salt and 1/4 tsp italian seasonings of your choice
add large can (28oz) of your favorite canned tomato
heat until warm, no more
Keep it simple and go much lighter on everything that you would in a pasta sauce. It will cook and thicken up in the oven. Cooking it now helps you end up with that shitty sweet pizza and the white sheet of cheese sitting on top of a thick paste of sauce. Leaving the sauce uncooked helps the cheese mix and get that nice orange color and avoids the nasty sweetness.
